MINI CAJUN-STYLE CHICKEN & VEGETABLE SKEWERS WITH STRONG ROOTS SWEET POTATO FRIES
Bag of Strong Roots Sweet Potato Fries
3 skinless chicken breasts, cut into bite-sized pieces
2 tablespoons of light soy sauce
Juice of 2 limes
2 tablespoons of Cajun spice
Salt and pepper
1 red pepper
1 yellow pepper
Punnet of cherry tomatoes
How to make it:
Pre-soak 6 bamboo skewers
Preheat the oven
Cook the Strong Roots Sweet Potato Fries according to package instructions.
As the Strong Roots Sweet Potato Fries are cooking, mix together the lime juice, soy sauce and Cajun spice.
Marinade the chicken pieces into the mixture. Toss and season well.
Chop up the peppers into bite-size chunks
Lightly brown the chicken pieces in a pan then transfer onto the bamboo skewers, together with the peppers and cherry tomatoes and place in the oven for 10-12 minutes, turning once.
Serve with the Strong Roots Sweet Potato fries and enjoy!
