Cork gets a dedicated glass champagne courtyard in a glass box

Cork has a new home for sipping champagne. Bloom at Hayfield Manor, which opened as an outdoor bar in 2023 for cocktails, has now been reimagined as a champagne courtyard, which will host many ladies this Christmas party season, we imagine!

Set within the hotel’s walled gardens, Bloom has a retractable wall and ceiling for those rare sunny days in Ireland with a glass of bubbles.

Champagne on offer includes houses like Lasnon (€24 a glass), Billecart-Salmon Rosé (€35 a glass), my own personal favourite Ruinart Blanc De Blancs (€45 a glass), and if you are really splashing out how about a glass of the the legendary Dom Pérignon Brut 2012/2013 for €120 or a bottle for €525.

Pair each glass with a menu that celebrates the best of Cork’s local produce. Curated by Hayfield Manor’s Executive Head Chef Mark Staples, the menu includes Rossmore West Cork Oysters, Slow-Cooked Braised West Cork Beef Bon Bons, and Monkfish Ceviche.
